Among the traditional foods of the Korean nation, there is a bean curd made of soya beans.
Bean curd has been a part of Koreans’ diet from before the period of Koryo (918-1392) as a longevity food which invigorates physical body and has a special virtue for curing diseases. In particular, it was a common scene in any houses that women made bean curd on ceremonial occasions.
Its making method and dietary customs are being carried forward still today.
One kilogram of soya beans is made into 4 to 4.5 kilograms of bean curd. Its making method is divided into such processes as swelling, grinding and filtering, boiling, adding brine, pressing and cutting.
Adding brine is an essential process for ensuring the quality and yield of bean curd. It is also very important to use good-quality soya beans.
There are scores of kinds of bean curd: coarse bean curd, soft bean curd, uncurdled bean curd, hemp bean curd (pressed in hemp cloth), silk bean curd (pressed in silk) and others. According to its processing methods, it is divided into a block of bean curd, dried bean curd, fermented bean curd, frozen bean curd, etc.
With the growing popularity of bean curd, its making method is finding its way into many countries around the world.
The bean-curd making method has been inscribed on the national intangible heritage list in May 2018.
