Potato-farina foods are now drawing the interest of the Korean people.
Kim Jong Hui, lecturer at Pyongyang Han Tok Su University of Light Industry, says: The potato farina, which preserves the unique taste of potato as it is, contains plenty of carbohydrate, protein, oil, vitamins and other nutritive substances. Unlike potato starch, it is a flour product with large amounts of nourishments in grains and vitamin C in vegetables and fruits. It also contains vitamins B group which helps retard ageing and other substances good for lowering blood pressure and for treatment of diabetes.
For these features, potato farina is recognized as a material for popular health food.
Potato noodle is an instant food that can be taken after putting it in cool water for about 30 minutes. Its transparent strips have better taste and stronger toughness than other noodles. Udong noodles mixed with potato farina and wheat flour do not become soft easily compared with others prepared from other materials, and preserves the delicate taste of potato.
Twisted doughnuts, breads and cakes made of potato farina are much favoured by children as they are tasty and easily digestible.
The Samjiyon Potato Farina Factory built in Samjiyon County, Ryanggang Province, the largest potato field in the country, produces huge amounts of farina with high nutritive value, making a tangible contribution to improving the people’s diet.
